The holidays are the most-happiest time of the year! We get to spend time with our loved ones and enjoy great food.  But this year, why not make it healthier by including a rainbow of colors with your menu of side dishes for an added health benefit.  A rainbow of orange, yellow, red and green veggies will make a beautiful presentation on your dinner table and give you a dose of antioxidants to counteract the stress of the holidays. Orange/Yellow Food Side Dish

Orange and yellow vegetables usually get their color from natural pigments called carotenoids.  Here are two amazing side dishes that will surely wow your guests this holiday season: [space]

  • Carrot Soufflé:  If you’re tired of serving a sweet potato casserole every holiday—why not do something different this year like adding a carrot soufflé to the menu. Carrot Soufflés tastes similarly to a sweet potato casserole—I know it’s hard to believe that carrots can tastes so amazing, right?  But this dish really does tastes shockingly good—even to people who don’t like carrots.  So go ahead and give it a try.  You still get to have a mouth watering dish full of immunity boosting beta-carotene that protects your eyes and reduces the risk of cardiovascular disease:   Carrot Soufflé Recipe courtesy of Foodnetwork.com. • Corn Pudding:  You grill corn and you boil corn, but have you ever baked corn?  Most of us haven’t, but if you have southern roots, the odds are your grandmother probably made it often.   Corn Pudding is an impressive, lightly sweetened dish to add to the menu because like carrot soufflé, most people have never tried it.  But this dish isn’t just great tasting—sweet corn is chock-full of zeaxanthin and lutein, two phytochemicals that also promote healthy eye vision.  Corn Pudding Recipe courtesy of Rouxed.com. Red Food Side Dish

Red vegetables get their beautiful rich color from natural plant pigments called anthocyanins and lycopene.  And since this is the season of cranberry sauce, the side dish below just might have your guest talking the most: [space]

  • Cinnamon Apple Cranberry Sauce:  Many people just serve sliced cranberry sauce straight out of the can. However this year, why not add an extra punch to this traditional holiday side dish?  Cinnamon Apple Cranberry Sauce is easy to make and it gives your tastes buds a deliciously layered flavor of cranberries, apples, and cinnamon to boot.  And even though its pretty and sweet tasting, it comes with a host of healthy, nutritional benefits as well. This dish packs a double punch because it contains both, cranberries and apples.  Cranberries are most popular for their ability to prevent urinary tract infections caused by the e-coli bacteria, but new research has shown that its unique bioactive compounds can greatly improve heart health too. Of course, it goes without saying that an apple a day helps to keep the doctor away.  Apples are a nutritional powerhouse because of the huge amount of life promoting vitamins, minerals, and fiber that are found in them.  Cinnamon Apple Cranberry Sauce Recipe courtesy of foodnet.com. [space]

Green Food Side Dish

Green vegetables get their life giving green color from its natural pigment called chlorophyll, which is a molecule that all living things need to survive. Below, I’ve included a green life promoting side dish that even the kids will absolutely love. [space]

  • Broccoli Rice Casserole:  Adding creamy cheese to any dish is sure to make it a hit, which is why this dish is another popular favorite for the holidays.   Broccoli is high in sulforaphane, which current research from the BBC suggests slows down arthritis and destroys cancer cells.  Broccoli Rice Casserole Recipe courtesy of Campbell’s Kitchen [space]

Your holiday dinner will definitely be a hit with these four colorful side dishes that packs a nutritional punch!
